It's heavenly especially on a hot day with a cold glass of nice white. That said you have to properly griddle the courgettes and scorch the peppers or there's very little flavour. Then you press it in the fridge for 2 days under heavy weights - so I can't be bothered to make it. Forest Gin is made in a tiny village in Cheshire with herbs and botanicals foraged from Macclesfield Forest - with a tiny bottling.
